You will never guess this puree doesn’t have potatoes or use real butter. In fact, it tastes even better this way. Keep this recipe handy for the holiday season, and swap out your starchy potatoes for something healthier instead.
1 head cauliflower, cut into 1/2-inch pieces (don't worry about keeping florets intact)
